
Avocado Toast — Three Ways

Ingredients
- 2 thick slices sourdough bread
- 2 ripe avocados
- Flaky sea salt
- Good olive oil
- — For the Classic: lemon juice, chilli flakes
- — For the Umami: everything bagel seasoning, sesame oil, pickled ginger
- — For the Fancy: poached egg, microgreens, smoked salmon (optional)
Instructions

Toast your sourdough until deeply golden. The sturdier the toast, the better.

Halve the avocados and remove the stone. Scoop the flesh into a bowl.

Mash with a fork — leave it a little chunky. Season with flaky salt and a squeeze of lemon.

Drizzle the toast lightly with olive oil before spreading the avocado.

— Classic: Spread mashed avo, squeeze more lemon, scatter chilli flakes, finish with flaky salt.

— Umami: Top with everything bagel seasoning, a few drops of sesame oil, and drained pickled ginger.

— Fancy: Top with a soft-poached egg, a pinch of microgreens or pea shoots, and smoked salmon if using.
Cook's Note
The olive oil under the avocado sounds fussy but it makes the whole thing more luxurious. Don't skip it.
